Louvia me Lahana - Black Eyed Beans  
     
  Ingredients
  • 1 lb black eyed beans
  • 1 bunch of greens (lahana)
  • olive oil
  • lemon
  • salt

 
 
  1. Soak the beans in cold water for approximately 3 hours. Change water and bring to boil. Allow to boil for 2-3 minutes and drain.
  2. Pour freshly boiled water onto beans, some lemon juice and cook on medium heat.
  3. When the beans are half cooked, add the greens. When almost cooked, add salt.

Alternatively, put the leaves in a separate saucepan with 1" of water and simmer until almost cooked. This maintains most of the nutrients in the leaves.

To serve, drain the beans and add the leaves. Dress with olive oil and lemon.
