Pork with Okra
  (Chirino me bamies)
  • 2lb pork cubes
  • 1lb okra
  • 1 large onion, chopped
  • 2 cloves of garlic, thinly sliced
  • (400g peeled tomatoes)
  • 1 tsp tomato puree
  • salt & pepper


Wash and remove the stalks. NB Do not cut the okra otherwise the vegetable will melt during cooking.

  1. Fry the pork cubes for a few minutes and remove from saucepan.
  2. In the same saucepan, sauté the onions and garlic.
  3. Add the okra and fry for a few minutes.
  4. Add the chopped peeled tomatoes, tomato puree and season. Cook for 2-3 minutes, then add the pork cubes.
  5. Add enough water to cover and bring to the boil.
  6. Lower the heat to minimum, cover and simmer for 45minutes or until the liquid reduces to a thick sauce.
  7. Serve hot as a main dish.
