Fried Courgettes  
  • 2 courgettes
  • 4 tbsp plain flour
  • salt

  1. Slice the courgettes or cut in half and slice lengthways.
  2. Place the flour and salt on a flat plate and dust each slice of courgette.
  3. Fry in hot shallow oil until golden brown on both sides.
  4. Place each cooked slice on kitchen paper to absorb the excess oil then place on the serving dish.
  5. Serve hot with Skordhalia (garlic dip) or Tsatsiki (yoghourt and cucumber dip).
