4 tbsp plain flour
Slice the aubergine and lay the slices individually on a tray.
Sprinkle the slices of aubergine with salt and leave for 30 minutes. Rinse under cold water and pat dry.
Put the flour and salt on a flat plate.
Take each slice of aubergine, dust both sides with flour and fry in hot shallow oil until golden brown on both sides.
Place each cooked slice on kitchen paper to absorb the excess oil then place on the serving dish.
