Bamies Yahni - Okra in Tomato Sauce  
  • 1lb okra
  • 1 large onion, chopped
  • 2 cloves of garlic, thinly sliced
  • tin of peeled tomatoes or 1lb fresh tomatoes, skinned and finely chopped
  • 1 table spoon tomato puree
  • salt & pepper

  How to make it
  1. Wash and remove the stalks. NB Do not cut the okra otherwise the vegetable will melt during cooking.
  2. Sauté the onions and garlic.
  3. Add the okra and fry for a few minutes.
  4. Add the chopped peeled tomatoes, tomato puree and season.
  5. Add enough water to cover and bring to the boil.
  6. Lower the heat to minimum, cover and simmer for 45minutes or until the liquid reduces to a thick sauce.
  7. Serve hot as a main dish or cold as a meze.
