Roast Chicken with Lemon and Oregano
  • 1 large chicken
  • juice of 1 lemon
  • 1-2 tsp oregano
  • salt & pepper
  • 1 cup of water

  1. Place the chicken in a roasting dish with a cup of water.
  2. Pour the lemon over the chicken.
  3. Sprinkle over the oregano, salt & pepper.
  4. Place in a medium to hot oven for 1 hours. Baste the chicken 2 or 3 times during cooking. If the juice is absorbed, add some more water.

(If cooking in a clay pot with the lid soaked in water for 15 minutes before putting in the oven, then do not put any water in with the chicken as it will produce a lot of natural juices).

Serve with roast potatoes.
