Chicken with Okra
  (Kotopoulo me Bamies)
  • 1 chicken
  • 1lb okra
  • 1 large onion, chopped
  • 2 cloves of garlic, thinly sliced
  • (400g peeled tomatoes)
  • 1 tsp tomato puree
  • salt & pepper



Wash and remove the stalks. NB Do not cut the okra otherwise the vegetable will melt during cooking.

  1. Cut the chicken into portions and fry in both sides. Alternatively, grill the chicken. Remove and place in a saucepan.
  2. In the same saucepan, sauté the onions and garlic.
  3. Add the okra and fry for a few minutes.
  4. Add the chopped peeled tomatoes, tomato puree and season. Cook for 2-3 minutes, then add the chicken.
  5. Add enough water to just cover. Bring to the boil then reduce heat to minimum, cover and simmer for 1 – 1 ˝ hours until the sauce has thickened.
  6. Serve hot with Greek salad.
