Chicken Barbeque
  (Souvlaki Kotopoulo)
  • 1 lb cubed breast of chicken
  • 2-4 cloves of garlic, crushed
  • juice of 1 lemon
  • salt
  • freshly ground pepper
  • 4 pitta bread (1 per person)
  • chopped tomatoes
  • chopped cucumber
  • chopped lettuce
  • chopped onions

  1. Marinate the chicken with garlic lemon, salt and pepper overnight in the fridge.
  2. Thread the chicken cubes on to kebab sticks (1 per person) and grill over moderate heat for approximately 15 minutes, turning occasionally. The juices should run clear if pierced). Do not over cook.
  3. Warm the pitta bread and make a slit on the side to open.
  4. To serve, remove the chicken cubes and put in the pitta bread with a selection of vegetables.
