Easter Cake

Ingredients

1 ½ lb strong flour 
1 sachet yeast
6oz sugar
3oz slightly salted butter
4 eggs
6floz warm milk
½ tspn mustixa
1tspn mexlepi

 
  Method

Use the dough hook on the food processor.

  1. Grind the mexlepi and mustixa to a powder.
  2. Place all the dry ingredients into a food processor and mix for one minute.
  3. Add the beaten eggs and warm milk and knead for a few minutes. The dough should not be sticking to the bowl.
  4. Place on a floured surface and shape into 6 round balls to make 2 tsouekia.
  5. Roll three balls into a long sausage shape about 18inches long and platt. Do the same for the other three balls.
  6. Place on a greased tray and cover with a clean tea towel and leave in a warm place for 1 hour until doubled in size.
  7. Brush the surface with beaten egg and sugar.
  8. Bake in a hot oven for 20 minutes until golden brown.
