Beef with Onions
  • 2lb cubed beef
  • 1 ˝ lb small onions (shallots)
  • 4 cloves of garlic, thinly sliced
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 tbsp black peppercorns
  • ˝ cup vinegar
  • salt
  • oil

  1. Fry the onions whole until golden brown then remove from heat.
  2. Sauté the garlic then add the meat. Fry until brown on all sides.
  3. Add the vinegar, bay leaves, cinnamon stick, peppercorns and salt. Add enough water to cover and bring to the boil. Cover and put on minimum heat.
  4. Simmer for 1 ˝ hours or until the liquid has thickened. Towards the end, add the onions to absorb some of the flavours.
  5. Serve hot.
